blueberry sunrise turnovers

Note: If using fresh blueberries, add a little lemon juice to make them more moist. This recipe is for one sheet of puffed pastry. If using two sheets, double recipe.

Ingredients:

1 cup fresh or frozen (thawed) blueberries

3 oz. cream cheese

1 tablespoon vanilla

1 tablespoon raw sugar

zest of one large lemon

1 teaspoon poppy seeds

1 sheet puffed pastry dough

  • Thaw dough for 30-40 minutes
  • Preheat oven to 400 degrees
  • Soften cream cheese in microwave for 30-40 seconds
  • In a bowl combine cream cheese and vanilla
  • In another bowl, add blueberries, sugar, lemon zest and poppy seeds
  • Add cream cheese mixture to blueberry mixture and stir
  • Unfold sheet and cut each strip in half and then into 6 squares
  • Add blueberry mixture to each square, fold over into a triangle or a rectangle, whichever you prefer
  • Pinch ends to make sure blueberries stay inside
  • Place on a cookie sheet
  • Sprinkle a little sugar in the raw on top of each turnover
  • Bake for 20-25 minutes (electric ovens cook quicker)
