butternut squash quesadillas

Ingredients:

1 butternut Squash (cooked, not real mushy)

salt

sweet or Spanish onion

Frank’s Red Hot

1 package Azteca 10 inch flour tortillas

  • Scoop cooked squash out of skin (it should be soft, but not real mushy)
  • Slice onion in rings very thin
  • Heat griddle with oil and saute onions until brown and a little crispy (add salt)
  • Remove onions from griddle
  • Heat griddle with oil again
  • Place 2 tortilla shells on griddle
  • Spread butternut squash on shells
  • Add onions and Frank’s Red Hot
  • Place tortilla shells on top
  • Cook until brown and a little crispy

Service with salad or soup.
