veggie stir-fry

Ingredients:

peanut oil or canola oil

broccoli, chopped

Tamari or soy sauce

fresh pineapple chunks

red pepper flakes

water chestnuts

onion, chopped

snow peas or bok choy, chopped

sesame seeds

fresh ginger root, minced (optional)

cashews or cocktail peanuts

honey

sea salt

  • Add oil to large skillet on low to medium, ginger.
  • Add all vegetables except bok choy to pan
  • Add soy sauce (generous amount)
  • Drizzle honey in pan
  • Turn heat to high to caramelize
  • Add bok choy and nuts to pan
  • Add more honey and soy sauce to taste
  • Add sesame seeds, sea salt and red pepper flakes
  • Cook until veggies are crisp, but cooked through.
  • Feel free to use any vegetables you like.

Serve with steamed long grain, medium grain, or jasmine  rice.
